Ingredients
Five eggplants
An onion
Sugar (1/2 cup)
Two cloves of garlic
Dried mint (3 tablespoon)
Crushed walnut (1/3 cup)
Oil
Salt
Water
Curd
How to Cook?
Wash eggplants and remove their skin with a knife.
Guidance: If you want the eggplants not to taste too bitter, put them in a bowl of salty water for 15 minutes.
Roast eggplants in a pan of oil and then put them on a cloth and squeeze them so that their oil comes out.
Attention: Do not press the eggplants.
Put dried mint in a bowl of water for 5 minutes and then roast in a pan with oil. Put aside a spoon of roasted mint for decorating your food. Slice an onion and chop cloves of garlic. Roast the slices of onion in a pan with oil and after that, add chopped cloves of garlic and roast them for 1 minute.
Add eggplants to the ingredients and press them by a wooden spoon while stirring altogether. Add roasted mint and crushed walnut(s). Mix curd with 1.4 cup of water, add them to the pan and wait until water boils completely.
Attention: when you want to add water, pay attention that the oil of the pan shouldn’t be hot. Turn off the stove and wait until the oil becomes cold and add water. Then, turn it on again.
When the water boiled, your food is ready.
