Kal Kabab; Ethnic Food of Gilan

One of the ethnic foods of Gilan is called Kal Kabab. The main ingredients of Kal Kabab are crushed walnut and eggplants.

Ingredients

Eggplant (1.5 kilogram)

Crushed walnut (300 grams)

Sour Pomegranate seeds (1 cup)

Thyme (2 soup spoon)

4 cloves of garlic

Salt

Pepper powder

How to Cook?

  1. Roast eggplants on stove (as you are roast meat on barbecue).
  2. Remove the skin of eggplants after roasting.
  3. Press unskinned eggplants in a bowl.
  4. Mix crushed walnut with pressed eggplants.
  5. Add pomegranate seeds to them and press the seeds.
  6. Add thyme with cloves of garlic and press them.
  7. Add pepper powder with salt and mix the ingredients.
  8. Put the ingredients in a plate and decorate them with pomegranate seeds.
