Komaj; Persian Sweet Bread

Komaj is a sweet bread that is baked with rice flour and sugar. This sugary bread is a traditional sweet of Hamadan city.

Ingredients

 Leaven (6 tablespoons)

 Water (1/2 cup)

 Sugar (a dessert spoon)

 Milk (half of a cup)

 Liquid oil (1/2 cup)

 Salt (1/2 dessert spoon)

 Flour (3 cups)

 Crushed walnut (100 gr)

 A yolk

 Sesame (sufficient amount)

How to Bake?

  1. Mix sugar, water and leaven.
  2. Add 1/4 cup of oil to them.
  3. Add flour to leaven smoothly and knead them to make leaven least sticky.
  4. Put leaven in a bowl with oil and put a cloth on it for an hour.
  5. After 1 hour, make 6 ball-shaped things out of leaven and put each of the balls on the surface you had poured flour before.
  6. Widen leaven.
  7. Press leaven by rolling pin and pour on it crushed walnut and oil. Do this step for other balls.

Attention: Don’t pour walnut on the last ball.

  1. Make a hole in the middle of leavens and make a roll shape.
  2. Cut one side of these rolls.
  3. Put rolls on a round pan, widen them, add yolk and pour sesame on them.
  4. Now put round leavens in the oven with temperature of 180°C for 30 minutes.

This sweet is very good for breakfast.
