Urmia Stew; Ethnic Stew of West Azerbaijan Province

Urmia Stew is a popular ethnic food of West Azerbaijan province. The main ingredients of the stew are pinto beans and meat.

Ingredients

Pinto beans (2 cups)

Meat (400 grams)

An onion

Two eggplants

Two tomatoes

2 potatoes

Saffron powder (1/2 teaspoon)

Sour grape (1/2 cup)

Liquid butter (2 tablespoons)

Oil

Pepper powder

Salt

Tomato paste

How to Cook?

Chop onion like cubes and roast them with butter in a pot. Chop meat like onions and roast them in a pan. Wash pinto beans in a basket and add them to the pot then add water to them and boil the beans.

Attention: add water when the pot and ingredients are not hot. It is better to turn off the stove and when the ingredients become cold, add water and turn it on again.

In a separate pot, roast tomato paste with oil and add saffron powder to it. Add sour grape and pepper powder and roast them a little. Add the ingredients of the second pot to the pot of beans at the end of cooking. Chop potatoes and eggplants and roast them in the other pot and add them to the stew when they cooked.

Attention: 12 hours before cooking, put beans in bowl of water and if you forgot, boil them twice with water.
